French Onion Soup
5 Medium Onions
4 Tablespoons Butter
1 Teaspoon Sugar
2 (10-3/4 Ounce) Cans Condensed Beef Consomme
1 Cup Water
2 Cup Holland House Red Cooking Wine
Grated Swiss Cheese
Paprika
Croutons

Cut onions in half from root to stems; then cut to one-half moon shape slices (about 1/8 inch thick). In a saucepan, melt butter over medium heat; add onion slices and sugar. Saute about 5 minutes or until gender and golden brown. Add consomme, water, and wine. Reduce to low heat. Cover and simmer 15 minutes, stirring occasionally. Pour soup into individual crocks. Top each with croutons. Cover with Swiss cheese; sprinkle with paprika..

Pralines
3/4 Cup Butter
2 Cups Sugar
1/4 Teaspoon Salt
2 Cups Chopped Pecans
2 Tablespoons Butter
1 Teaspoon Soda

Stir all ingredients except soda in a 4-quart bowl. Cook on high for 12 minutes, stirring every 4 minutes with a wooden spoon. When ready, stir in soda and stir until foamy. Cook on high for 1 minute to give a caramel color. Beat (about 1 minute). Drop by teaspoon on buttered foil. Makes about 5 dozen.

Potato-Cheese Soup
4 Chicken Breasts or 1 Whole Chicken
4 to 6 Sliced Carrots
1 Small Chopped Onion
4 to 6 Sliced Celery, Optional
4 to 6 Diced Small Potatoes
1 Cream of Chicken Soup
1 Cup Milk
4 to 6 Slices of Any Type Cheese or 1/4 Pound Velveeta Cheese
Salt and Pepper to Taste

Boil chicken, carrots, onions, celery, and potatoes until done. Remove chicken and debone. Add soup concentrate, milk, and cheese. Return chicken to broth. Simmer until cheese melts. Serve hot.
WARNING: Will scorch easily.

Chewy Pecan Pralines
2 Cups Sugar
1-1/2 Cups Cream
1-3/4 Cups Karo
1 Cup Butter
2 Cups Pecans
1 Teaspoon Vanilla

Combine sugar, cream, Karo, and butter. Cook until mixture reaches firm ball stage. Remove from heat. Add pecans and vanilla. Stir until thick; drop by teaspoonfuls on buttered platter. Cool. Wrap each praline separately in wax paper. --S.P. and Bernice Echols

Strawberry Candy
1 Can Eagle Brand Milk
4 Small Boxes Strawberry Jello (3 Ounce)
2 Cups Coconut
1 Cup Chopped Pecans

Mix all together; roll into little balls or shape like strawberries. Roll in granulated sugar.
