TEXAS CHEESE DIP
A mild creamy, cheesy dip.
Melt in microwave...
1 pound Velveeta Cheese, cubed
Add...
8 ounces Cream Cheese
1 pint Salad Dressing
3 cloves Garlic, minced
2 ounces Pimentos, diced
4 ounces Chopped Chilies
4 boiled Eggs, diced
Will keep in refrigerator. Serve with Tortilla Chips.
BLUE MARGARITAS
Moisten rims of Margarita glasses with lime. Invert
into Margarita Sale. (Coarse salt). Chill glasses. In
blender, combine 6 ounces of Tequila, 6 ounces
Frozen Limeade concentrate, 1/3 cup Blue Curaco.
Blend well. With blender running, add 3 cups
Crushed Ice. Blend until slushy. Pour into chilled
glasses. Garnish with Lime Slice. 8 Servings.
LONE STAR CASSEROLE
An easy recipe with great results.
Cook and set aside.. 1 pound Ground Beef
Season with..... 1 tsp. Garlic Salt
In seperate skillet cook
until transparent.... 3/4 cup Onion, chopped, in two
tbsp. Margarine.
Add and Simmer 10 minutes...
1 can (15 oz.) Tomato Sauce
1 can (4 oz.) Diced Green Chilies
1 tsp. Salt and Cumin
1/4 tsp. Red Pepper
Crush and have ready..... 1 pkg. (8oz.) Tortilla Chips
Grate............................. 2 cups (8 oz.) Cheese
Layer in a BUTTERED 9-inch baking dish. Start with
chips, then beef, cheese and sauce. Bake in a
preheated 350-degree oven for 20 minutes. Remove
from oven.
Spread with..... 1 cup Sour Cream
Sprinkle with.. 1/2 cup grated Cheddar Cheese
Bake an additional 5 to 10 minutes. Serve with Beans
& Salad

Cover and place in preheated 350-degree oven for 2
1/2 to 3 hours or until tender. During las 15 minutes
add 1 Green Pepper, chopped. Place on platter and
cover with remaining sauce from pan.

Chop in blender...
1 Garlic clove
6 Tomatillos, halved
2 Green Tomatoes, quartered
Pour mixture into skillet and cook 4 to 5 minutes.
Return to blender.

SOBER SANGRIA
In 2-1/2 quart pitcher combine 2 cups Cranberry Juice,
2 cups Orange Juice, 2 table spoons Lemon Juice, 1
quart Strawberry Soda. Chill well. Add 1 Lime, Lemon,
and Orange, slice thin and serve over Ice Cubes in tall
glasses. 14-16 servings.

4 cans (4 oz.) Whole Green Chilies, drained
Grate and mix together...
1 1/2 cups Monterey Jack Cheese
1 1/2 cups Cheddar Cheese
Stuff each chili with 3 tablespoons cheese. Arrange in
bottom of lightly Greased 13x9x2-ince baking dish.
Top with remaining cheese.
Combine and mix well...
6 Eggs, beaten
3/4 cup Milk
Salt and Pepper
Pour over chilies. Bake in preheated 350-degree oven
for 30 minutes or until set. VARIATION: Brown and
season 1 pound Ground Beef and stuff each chili with
