Bacon Wrapped Water Chestnuts

Drain well 2 cans (5 oz. each) Water Chestnuts
Marinate 2 to 3 hours in 2 to 3 Tablespoons Soy Sauce, 2 Teaspoon Pepper
And 2 Tablespoons Brown Sugar

Drain well. Wrap 1/3 slice Bacon around each chestnut and secure with a toothpick. Bake on a cookie sheet in a 350-degree oven until brown and bacon is crisp.

Yield: 16 to 18 Hors D'Oeuvres

Ham Log

Combine in a medium bowl

1 Cup Ground Cooked Ham
8 Ounces Cream Cheese, softened
3 Tablespoons Finely Chopped Green Pepper
2 Tablespoons Finely Chopped Onion
2 Tablespoons Prepared Horseradish
1 Teaspoon Worcestershire Sauce
1/8 Teaspoon Ground Fresh Pepper

Mix well to blend. Divide mixture in half. Spoon onto waxed paper. Roll into logs 3 to 4 inches long, and wrap and chill several hours or overnight. To serve, combine 2 cup finely chopped chives and 3 Tablespoons Salad Seasoning on a piece of waxed paper. Roll chilled logs to mixture, coating generously. Place on a serving plate and garnish with Crackers.

Texas Fried Steak
(Also for Chicken and Chicken Livers)

Cut into convenient serving portions Round Steak (have your butcher tenderize)
Sprinkle with Salt and Pepper
Dip in a Shallow Bowl of Buttermilk
Mix together in separate bowl Flour Salt and Pepper, scant

Dip steak in buttermilk and then flour. Fry in hot Shortening and drain on paper towels.

Variation: 1 Beaten Egg with Sweet Milk added may be used instead of the Buttermilk. Use just Sweet Milk for a thinner crust.

Aunt Tootsie's Chocolate Cream Pie

Combine and cook over low heat until thick

1/4 Cup Flour
2/3 Cup Flour
1/8 Teaspoon Salt
2 Tablespoons Cocoa
2 Cups Milk

Stir 2 cup mixture into 3 Egg Yolks, well beaten.
Pour back into saucepan and cook until very thick.
Add 1 Tablespoon Butter and 2 Teaspoon Vanilla.

Mix well and cool. Pour into baked Pastry Shell and top with Meringue. Brown in preheated 375-degree oven for 10 to 12 minutes. Yield: 8 Servings.

Cocktail Wieners

Heat 1 small jar Jelly, any kind (my favorite is Jalapeno Jelly) and Equal Amount
Catsup. Cut into one-fourths 1 pound wieners.

Cook for about 20 minutes on simmer. Serve in a chafing dish. Use toothpicks to spear wiener chunks.

A Real Man's Cheeseburger Quiche

Make favorite Quiche Pastry, or use frozen Pastry Shell. Prepare by brushing with a very small amount of Egg White. Bake 10 minutes at 425 degrees. Cool.

Melt in skillet over high heat 2 Tablespoons of Butter. When very hot, fry until brown 3/4 pound Ground Meat, very lean. Drain well. Season with Salt and Pepper. Place in prepared pastry. Sprinkle over meat 11/2 Cup Grated Sharp Cheddar Cheese.

Make a Custard of
1 Cup Cream
1 Egg
2 Egg Yolks
1/4 Teaspoon Salt
1/8 Teaspoon of Cayenne
1/8 Teaspoon of Nutmeg

Pour custard over cheese and meat. Bake in preheated 375-degree oven for 35 to 45 minutes, or until custard is puffed and tests completely done, and pastry is nicely browned. Allow to rest 5 minutes before serving. Serve warm with Salad and Dessert.

Yield: 4 to 6 Servings.

Variation: Chili burger Quiche: Follow recipe above. Sprinkle 1 Teaspoon Chili Powder over the grated cheese. Pour on custard, bake as directed.

All American Apple Pie
(Make Ahead, Freeze and Bake When Needed)

Pare, core and slice thin 6 Tart Apples.

Combine and mix with Apples
1 Cup Sugar
1 Tablespoon Flour
1 Teaspoon Cinnamon
1/4 Teaspoon Salt
If Apples are not tart, add 1 Tablespoon Lemon Juice

Fill a 9-inch pastry-lined pie pan with Apple Mixture. Dot with 2 stick Butter. Cover with a top crust, cut slits to allow steam to escape. Bake at 400 degrees for 50 minutes or until done.

1-2-3 Lemonade Pie

Blend well 1 Small Can Frozen Lemonade and 1 Can Eagle Brand Milk.
Fold into 1 Carton (8 oz.) Cool Whip.

Pour into a cooked Pastry Shell or Graham Cracker Crust. Chill.
