Pecan Crispie Cookies
Cream together
2 Cup Shortening
2 Cup Margarine
2-1/2 Cups Brown Sugar, firmly packed
2 Eggs, well beaten
Add 2 Eggs, well beaten
Sift together and add
2-1/2 Cups Flour
1/4 Teaspoon Salt
2 Teaspoon Soda
1 Cup Pecans
Drop by teaspoonfuls about 2 inches apart on
greased cookie sheet. Bake at 350-degrees for
12 to 15 minutes.
Early Bird Burritos
Saute= 1/4 Cup Green Pepper, chopped and
1//4 Cup Onion chopped in 2 Tablespoons
Butter or Margarine.
Reduce heat, add 1/4 Pound Velveeta Cheese,
cubed and 6 Eggs, beaten.
Cook slowly, stirring occasionally, until eggs
are set and cheese is melted. Heat in
microwave, or wrap in foil and heat in oven, 4
large (10-inch) Flour Tortillas. Spoon egg
mixture into middle of tortilla. Fold bottom over
mixture about 1/3 way. Fold over two of the
sides. Serve with Salsa or Pico De Gallo.
Variation: Dice 1 Medium Potato and saute=
with the pepper and onion.

Peanut Butter Mogul Treats
Boil 30 seconds 1 Cup of Karo and 1 Cup
Sugar
Add 1 Cup Peanut Butter.
Stir in 4 Cups of Plain Captain Crunch Cereal.
Drop onto waxed paper in small mounds. Let
cool. Store in air-tight container. You may use
microwave for this one.
Easy Eggs Rancheros
Lightly grease a 9-inch quiche dish.
Combine and pour into dish
1 Can (8 oz.) Tomato Sauce
1 Teaspoon Chili Powder
2 Teaspoon Cumin
Very carefully, break evenly over sauce in dish
8 Eggs..
Sprinkle with 1 Cup Cheddar Cheese, grated
Bake an additional 5 minutes. Spoon eggs onto
Warm Tostados Shells, top with dollop of Sour
Cream and Jalapeno slices. Yield: 4 Servings.
Louise's Cracker Creations
Spread 20 Better Cheddar Crackers lightly
with Peanut Butter.
Top with another 20 Better Cheddar Crackers.
Melt 8 Ounces Almond Bark.
Dip crackers in almond bark. Shake off excess.
Lay on wax paper and chill.
Note: Use the miniature cheese crackers for
parties.
